¿Qué es El Estudiante?
Es una crepería, al inicio con el concepto de crepería móvil, con concepto de Food Truck y que pudiera estar en eventos, etc. Ahorita vamos a tener una sucursal también en Plaza Pozuelos, nuestra apertura es el 3 de noviembre, así también podemos darle otro giro al concepto, pero en sí es una crepería para toda la familia.
¿De dónde viene el nombre?
Viene de la esencia misma del estudiante, de ser una persona aventurera, con hambre de saber, conocer, experimentar, quisimos darle este sentido al negocio y sobre todo porque la ciudad en sí es del estudiantes, es una “Univer-ciudad”, por esta conexión tan grande que tiene con la Universidad de Guanajuato y todos los estudiantes que nos visiten, quisimos darle ese toque.
¿Cuál es la especialidad de El Estudiante?
Las crepas dulces les encanta a todo el mundo, lo difícil es encontrar una crepa salada que este muy buena, entonces nos esmeramos muchísimo para crear ambas versiones y que la crepa salada sea la sorpresa que no te esperabas que te ibas a encontrar ahí. Pero definitivamente la favorita es la bomba de chocolate. Lo padre es que puedes combinarla y escoger los ingredientes que tú quieras.
¿Cómo llegaron a los Food Truck de la Presa?
Vimos la convocatoria de este nuevo proyecto en redes sociales, la verdad nos gustó muchísimo, hacía mucha falta porque La Presa es un lugar muy bonito, no creo que está todavía muy explotado, falta que los turistas conozcan y que no se queden únicamente en la zona centro, atraerlos acá podría reactivar la zona, es muy bonita, es mi favorita de la ciudad.
¿Cómo empezaron?
Encontramos un carrito, un remolque en oferta y nosotros teníamos ideas de lo qué queríamos, sabíamos que algo de postre pero no qué iba a ser. Mi hermana vive en Francia y se casó con un Francés y yo soy muy fan de la cultura francesa y me encantan las crepas, y por eso nos decidimos, se nos hizo muy práctico, y no necesitas ser el súper Master Chef para hacer las crepas, aunque sí tiene su chiste ser maestro crepero. Con la pandemia fue cuando decidimos sacar algo nuevo.
¿Qué los inspiró a tener su propio negocio?
Nosotros ya teníamos otro negocio de Souvenirs de la Universidad, queríamos que fuera sobre esta misma línea, para nosotros significaba mucho los estudiantes. Con la pandemia cerramos el negocio y decidimos hacer algo de alimentos, nos costó mucho trabajo, pero todo este año ha sido de puro crecimiento. Cuando tienes ese chip de emprendedor no importa que proyecto hagas, si fracasa o no, siempre puedes renovarlo o continuar desarrollando varias ideas.
¿Cuál es su parte favorita de ser dueños de su propio negocio?
La incertidumbre, cuando eres emprendedor tienes que estar acostumbrado a la incertidumbre y te tienes que acostumbrar a sentirte incómodo, porque eso significa que algo bueno está pasando, cuando uno siente miedo de algo es porque vas a avanzar a otro nivel. Esa es mi parte favorita, la incertidumbre al inicio y saber como avanzar a pasos firmes hacia el logro de los objetivos.
¿Qué consejo le darías a alguien que quiere empezar su propio negocio?
Que esté preparado para el fracaso, en muchos lados pintan al emprendedor como que todo va a salir perfecto y la realidad es que no, es un trabajo muy complicado, al inicio no ves resultados inmediatos y es mucho el trabajo que tienes que hacer, hay que estar conscientes de que no se va a ver tu esfuerzo reflejado en un corto plazo pero que debes cambiar tu comportamiento de este momento para lograr las metas a largo plazo. Mi principal consejo es que se lancen, que se atrevan, que no les de miedo fracasar, obviamente midiendo el riesgo.

What is El Estudiante?
It is a creperie, at the beginning with the idea of a mobile creperie, with the concept of a Food Truck and that could be at events, etc. Now we will also have a branch in Plaza Pozuelos, our opening is on November 3rd, so we can also give another twist to the concept, but in itself it is a creperie for the whole family.
Where does the name come from?
It comes from the very essence of the student, to be an adventurous person, hungry to know, to know, to experience, we wanted to give this sense to the business and especially because the city itself is of the students, it is a "Univer-city (Word game for Guanajuato, joining University and City), because of this great connection it has with the University of Guanajuato and all the students who visit us, we wanted to give it that touch.
What is El Estudiante's specialty?
Everyone loves sweet crepes, the difficult thing is to find a savory crepe that is really good, so we work very hard to create both versions and the savory crepe is the surprise that you didn't expect to find there. But definitely the favorite is the chocolate bomb. The great thing is that you can combine it and choose the ingredients you want.
How did you come to La Presa Food Trucks?
We saw the announcement for this new project on social networks, we really liked it, we really needed it because La Presa is a very beautiful place, I don't think it is still very exploited, tourists need to know about it and not just stay in the downtown area, attracting them here could reactivate the area, it is very beautiful, it is my favorite in the city.
How did you start?
We found a cart, a truck on sale and we had ideas of what we wanted, we knew something for dessert but not what it was going to be. My sister lives in France and she married a Frenchman and I am a big fan of French culture, I love crepes, and that's why we decided, it was very practical, and you don't need to be the super Master Chef to make crepes, although it has its trick to be a master crepe maker. The pandemic was when we decided to come up with something new.
What inspired you to start your own business?
We already had another business of the University of Guanajuato Souvenirs, we wanted it to be along the same lines, for us the students meant a lot. With the pandemic we closed the business and decided to do something with food, it took a lot of work, but this whole year has been one of pure growth. When you have that entrepreneurial chip it doesn't matter what project you do, whether it fails or not, you can always renew it or continue to develop various ideas.
What is your favorite part of owning your own business?
The uncertainty, when you are an entrepreneur you have to be used to uncertainty and you have to get used to feeling uncomfortable, because that means that something good is happening, when you are afraid of something it is because you are going to advance to another level. That's my favorite part, the uncertainty at the beginning and knowing how to move forward with steady steps towards achieving your goals.
What advice would you give to someone who wants to start their own business?
To be prepared for failure, in many places the entrepreneur is painted as if everything is going to be perfect and the reality is that no, it is a very complicated job, at the beginning you do not see immediate results and there is a lot of work you have to do, you have to be aware that you will not see your effort reflected in the short term but you must change your behavior at this moment to achieve long-term goals. My main advice is to take the jump, to dare, to not be afraid to fail, obviously measuring the risk.
